b. Pastries brings San Francisco an elegant yet contemporary salon with an open pastry shop, which means the combination of Belinda Leong’s talent with Michel Suas’ wisdom and expertise. The menu consists of modern French-style pastries with American flavors and local effects. Her pastry collection includes individual cakes and starters, tarts, verrines, macarons and a range of wieners.

Tartine’s healthy sandwiches, a favorite among Belinda’s time in Paris, complement the pastry. The tartines are ready on Levain bread, which Michel specially made for b. Patisserie. Belinda Leong started her job as a pastry chef at the Gary Danko restaurant in San Francisco in 1999.

After eight prosperous years, she left the restaurant for Europe to perform in some of the most prestigious restaurants and pastry shops in Paris, Barcelona and Copenhagen. Schubert’s bakery Oswald R. Schubert is a German immigrant who came to San Francisco and started baking in a small space on Fillmore Street. It soon bloomed and he needed more space to keep up with demand. In the 1940s it moved to its current location at Clement St.

As Oswald got older, he decided to retire and sold the shop to another baker named Fred. Fred continued the artisanal baking methods he had used since the business was founded, adding a few new products to the already vast selection. The current owners Lutz and Ralph Wenzel bought the company in 1995.

The Wenzel brothers are the fourth generation of bakers from Germany and combine old world and modern technology with delicious results. Some of the favorites from 1911, including the opera and the Neopolitan cake, are still baked by popular demand to this day.
